Yoghurt and Berry Sundae to improve gut health

Serves 4

Ingredients
40g dried cranberries
50ml apple juice
150g Cherries, halved and stones removed.
150g blueberries

For the topping
Coconut oil spray
4 tablespoon of rolled oats
100g almonds
1 tablespoon of runny Manuka Honey or other high anti-oxidant honey.

For The Yoghurt
450g Probiotic natural Yoghurt
1- 2 teaspoon of runny Manuka or other high in anti-oxidant honey

1)Preheat the oven to 180 degrees c/ 160 Degrees c fan/gas 4

2)Place the dried cranberries in a small pan with the apple juice and bring to a gentle simmer until cranberries are plump, remove from the heat and pour into a small bowl to cool. Stir the cherries and blueberries into the cranberries.

3)Scatter the oats and almonds onto a large baking sheet sprayed with coconut oil and toast in the oven for 10 minutes or until just golden. Drizzle with 1 tablespoon of the honey and return to the oven for 6 minutes. Set aside to cool.

4)Stir 1 teaspoon of honey into the yoghurt. Once the oats and almonds have cooled, tip out onto a large chopping board and roughly chop.

5) In a sundae glass layer the fruit oaty mixture and yoghurt. Serve for breakfast, brunch or a dessert.
